We are ALLLLL about the soups at our house. And though soup is more typically a cooler weather dish, I can’t help myself in the warmer months too. I just can’t stay away.

I mean, what’s not to love about soup when it is so versatile and such a team player with whatever I have on hand in my fridge and pantry?!  Oh, and as a mom, I feel compelled to also mention that it’s one of the EASIEST ways to get more veggies in my kids’ bellies.

The Instant Pot is any soup lover’s best friend, y’all. I haven’t made soup in anything else in a YEAR! (That’s a lot of bowls of soup). After using my beloved pot to stock my freezer with glorious batches of chicken broth, it’s just so easy to whip up meaty soups and blended soups and all manner of comfort soups.

Until recently, though, tomato soup would never be included in that list. Which is sad, because tomato soup was always one of my childhood favorites. Creamy tomato soup + cheesy, buttery bread instantly transports me back to my grandmother’s kitchen. (Ahhh, thanks for all the good times Campbells).

But I had to stay away from tomato soup (so I thought) because my husband isn’t a fan.

NO LONGER!  I have been reawakened to my love for tomato soup, and thanks to this incredibly easy recipe, I have been making it frequently when he’s not home or there are other options for him in the fridge.

Now, this is very much a pantry-friendly soup. I wanted to have a version that I could whip up when the craving hit without having to worry about whether or not we had the right kind of tomatoes on hand. The short ingredient list is made up of items I always keep stocked.

I’m going to let you in on one of my favorite simplified grocery shopping tips. Organic canned diced tomatoes. I don’t buy canned sauce, canned whole tomatoes, canned crushed tomatoes, canned diced tomatoes, etc.

To keep things simple, I ONLY buy boxes of organic diced tomatoes at Costco and use them for everything. They go in chili and soup and other dishes. They get added to fresh tomatoes to make party-ready batches of salsa. I use them for big pots of marinara and small batches of pizza sauce.

And now I use them for creamy tomato soup.

Friends, I don’t know about you, but my mom brain THRIVES on simple.

See the picture above? One-hour French bread toasted with butter and cheddar pairs wonderfully with this soup. (All soup, if I’m being honest). Do like my friend Ingrid and make them into “dippers”  for your kids to eat with their soup.

Description

A creamy tomato soup made with pantry staples in your Instant Pot!


Ingredients

Scale
  • 1 Tbsp butter
  • 1/2 onion, diced
  • 4 14.5oz cans organic diced tomatoes
  • 2 Tbsp sugar
  • 1 C chicken broth
  • 1 Tbsp dried basil
  • 1/2 C heavy cream


Instructions

1. Heat the Instant Pot on Sauté. Add the butter and melt. Add the onions and cook for 5 minutes, or until the onions are softened and beginning to brown.

2. Pour in the tomatoes, sugar, chicken broth, and basil over the onions. Stir to combine. Cover the Instant Pot and cook on high pressure for 7 minutes.

3. Quick release or naturally release the pressure. (I’ve done both, depending on how much of a hurry I was in. It won’t affect the end result). Carefully transfer the hot mixture to a blender, and blend until smooth. Return the soup to the Instant Pot.

4. Stir in the heavy cream. Serve immediately with grated Parmesan, croutons, or bread (optional).

*The serving size noted is 1 1/2 cups of soup, however, we often eat less per meal.

  2. Hmmmm. Maybe it was my tomatoes, but this was heavy on the sugar in our opinion. I used paste tomatoes from the freezer, measured by weight, about 3 1/2 pounds.
    I added some salt, pepper, and some tomato paste which was a good remedy for the sweetness. It was quick and easy. I’ll try again with less sugar.

  7. Made this tonight with my teen daughter and it was delicious! We made a few tweaks – no onion in the house but we had the diced tomatoes with basil, garlic and oregano added so used those and omitted the onion and basil. Was delicious with some fresh Parmesan on top and some warm panini sandwiches – quick and easy for a busy night!

  10. I used fresh tomatoes from my garden, the only thing different was I poured the soup through a strainer to catch all the tiny tomato seeds. Then added the cream , it was velvety smooth and so delicious!

  12. While I like putting all the ingredients into this soup – so i know exactly what goes in it, i just didnt ‘love’ it. I would eat it again but I’d probably make the extra green broccoli soup over this most daya. (I grew up on campbells soup, so maybe I’m just so used to that hehe).

  13. This is great! If you use Greek yogurt instead of heavy cream it gives it more flavor, and you can also add 2 oz. of pancetta which in my opinion makes this recipe much better.

  14. Can’t wait to try this recipe. I want to double it though. Will that change any of the times on the Instant Pot?. The pot is new to me.

  15. Could this be made and then kept warm in the IP for a while? I want to make it for soup day at my school but it would have to be made earlier in the day and kept warm for lunch time. Would it work?? 🙂

  16. I would like to make this recipe with fresh tomatoes. I have a Vitamix blender and am wondering if I were to blend the tomatoes first would it would save having to bled the mixture afterwards. Would I add the sugar into the blender or just put all the ingredients into the IP (after the tomatoes were blended)?And yes I realize I could do the whole thing in the Vitamix but Ii want to do it in the IP..

    1. The only thing with blending the tomatoes first is that your onions wouldn’t be blended in. But that could just be personal preference. And I would definitely use the Instant Pot to cook it for a better flavor!

  17. I cant wait to try this recipe! Sounds delicious! Could you use an immersion blender instead of a regular blender?

    1. I would suggest using an equivalent amount of fresh tomatoes, so about 7 to 8 cups. I would also try large slicing/canning tomatoes.

    1. I would use about 7-8 cups of chopped tomatoes, which would be about the equivalent of the cans of diced tomatoes. 4 or 5 large tomatoes might do it. 🙂

      1. Do you need to drain the liquid from the tomatoes before putting it in the soup if you’re using fresh tomatoes?

  18. Would half and half work instead of heavy cream? I am always stocked on everything the recipe calls for but that.

    1. Yes it would. I have seen where other people also like to use milk in place of the cream. The soup might just be a little less thick, but otherwise still delicious!

    1. This recipe makes a little over a half-gallon of soup. So, if a serving is 1 1/2 cups, you can easily get 5 servings from this recipe.

  19. I just made this for lunch! I mixed in some pepperoni and topped with mozzarella cheese. I used the garlic, oregano and basil diced tomatoes. It tastes like pepperoni pizza soup! So quick and easy – best soup I’ve ever had!

      1. I’m hoping to make this later today. I also wondered about freezing because I try to supply meals for my elderly parents. I wondered if it should be frozen before the cream is added.
