I have not shared a two week meal plan in almost a year here on the blog! I have missed putting them together and sharing them, because it helps me a lot to see what we’re going to be eating, and because I know it gives y’all fresh ideas too.

Last year was FULL of recipe testing for my cookbook, and I couldn’t share all that we were eating. (That was SO HARD, friends.)

The time has almost come, though, when you will be able to hold the cookbook, flip through the pages, and see all the recipes for yourself! So, I’m going to resume sharing meal plans on the blog.

My meal plans will be a mix of recipes already on the blog (so you can access them now), one or two recipes I’m testing (so you will get them soon), and recipes from my cookbook (which you can preorder and get in May).

I’ve been going back and forth on how much to share because I want you to be as excited about the cookbook as I am, but I also don’t want to drive you crazy sharing recipes that you can’t access yet. Let me know what you think in the comments. Is it happy anticipation or an annoying tease? I definitely don’t want to be the latter for the next couple of months.

Two Week Meal Plan #5

I like to plan for meals for two weeks at a time. This routine works well for us because it’s helpful without being too overwhelming to sit down and do. You can read more about my meal planning method and get a helpful printable in this post, but the basics are: write down what you already have, make notes of any special occasions or important dates to note, and then plan meals and your shopping list– all on one page.

These days, I’m doing this all in my bullet-journal, but the routine is still the same. I have a master list of dinner ideas, breakfast ideas, and lunch ideas in my journal which make coming up with meal ideas much easier.

I’m also keeping a copy of my Kitchen Essentials Checklist in my bullet journal, so remembering everything at the store is easier too.

Prep

Ideally, I will make all of this at the beginning of the week so I can use each for recipes during the next couple of weeks. Sometimes this happens, and sometimes I just have to squeeze it in during the week as I can. Thankfully, just about everything on my prep list takes very little hands-on time. 

Breakfasts

As you can see, we like very filling breakfasts. Oatmeal and millet are the easiest, but even the eggs and pancakes are straightforward and simple too.

Lunches

Here's our meal plan for breakfasts, lunches, & dinners for the next two weeks! 

Salads, sandwiches, chicken salad will be reserved for days we eat out of the house. When we are home, we typically enjoy hot lunches together (my husband works from home too). Having ingredients prepped ahead of time makes throwing together hot lunches much easier.

Dinners

Here's our meal plan for breakfasts, lunches, & dinners for the next two weeks! 

I typically plan ten dinners for two weeks. We may not get through all of them, but I know at least that I have all the ingredients I need on hand for each of these recipes.

The smoked pork butt takes the longest, but the smoker is my husband’s domain and I do not need to do anything but enjoy the amazing meat! It’s actually going right now and smells heavenly. (We love this pit barrel smoker. It’s really easy to use and has great reviews).

The empanadas require the most time and effort, but they are well worth it. Even so, we probably only have them a handful of times a year, so they are definitely a treat!

Everything else is either minimal prep and effort in the Instant Pot, or straightforward and simple in the oven.
