This Week’s Meal Plan :: March 2017

I am out of a ton of my normal kitchen staples, but this is our meal plan for the week using only what we have on hand! 

I am out of a ton of my normal kitchen staples, but this is our meal plan for the week using only what we have on hand!

When I was thinking about what we would eat this week, and what I thought we had on hand, I was certain that I would need a long list of food from the store. Surely, as empty as my refrigerator looks!

But, after making a list of what is on hand in our kitchen, I realized I could make a meal plan for the week without needing to go to the store. (Except for essentials like coffee, milk, and bananas).

I am not sure what our week is going to look like, other than that it is going to be busy and I will be doing a lot of solo-parenting. At least now I know I won’t have to worry about deciding what to make everyday.

Aside from wanting to be prepared for the week, my biggest motivation for trying to meal plan with only what is on hand is trying to reduce our grocery spending. It’s outta hand, guys. So I am making myself stick to this plan, no matter how much I’d like to splurge on Chick-fil-a or how much we miss eggs. It’s a week. We can do this.

 

End of March Meal Plan

Monday

Breakfast :: pancakes (sub chia seed for eggs)

Lunch :: grilled cheese, applesauce from the freezer, & veggie straws

Dinner :: freezer burritos with yogurt and guacamole (from the freezer) to dip

Tuesday

Breakfast :: homemade yogurt with strawberry jam

Lunch :: crackers w/ tuna salad, carrot sticks & hummus, apple slices

Dinner :: cheeseburgers, carrot fries & homemade ranch, frozen green beans

Wednesday

Breakfast :: chocolate zucchini muffins

Lunch :: sheet pan nachos

Dinner :: Instant Pot jambalaya

Thursday

Breakfast :: steel cut oats with raisins, dates, & sliced almonds

Lunch :: loaded potato wedges

Dinner :: pintos with onions and bacon, sautéed garlicky greens, cornbread

Oatmeal

 

Friday

Breakfast :: biscuits & apple butter

Lunch :: honey roasted carrot soup

Dinner :: frozen potstickers & fried rice

Saturday

Breakfast :: pancakes

Lunch :: hot dogs, veggie straws, & apple sauce

Dinner :: sausage & kale soup in the Instant Pot and cheesy drop biscuits
